Zucchini Bread Recipe

 

Here is a great delicious way to get some vegetables into those picky eaters.

Zucchini Bread

3 eggs

1 cup canola oil

2 cups sugar

2 tsp vanilla

1 can crushed pineapple packed in it’s own juice (small can drain well)

2 cups grated zucchini with skin

3 cups flour

2 tsp baking soda

1.5 tsp salt

¾ tsp baking powder

1 cup chopped walnuts

1 pkg chocolate chips (optional)

Beat together eggs and oil.Add sugar, vanilla, crushed pineapple and zucchini. Mix together dry ingredients.Add wet ingredients to dry ingredients. Mix well. Add nuts and chocolate chips. Stir well.

Makes 2 loaves. Grease sides and bottom of pan.Cover bottom of pan with wax paper.Flour bottom and sides of pan.

Bake for approximately 1 hour at 350 degrees.
